To start the new year, I have to confess... I am addicted to watching any food related programs, especially on the BBC. This might not come to you as a surprise, as this is a foodieblog. However I rarely cook anything by following a recipe, I roughly follow this and give the dish my own twist. When I saw Rick Stein in Vietnam making a Pho bo, a vietnamese beef noodle soup, my mouth watered... I do love noodles!
So, got me most of the ingredients and here's my version of Pho bo.
Crushed some chalots and ginger. Dry fried the spices, cinnamon sticks, star anise and fennel seeds.
Made beef broth, added celery, onions and bean sprouts. Served with banh pho, rice noodles, and slices of fillet beef. I didn't have lime, but lemon works as well.
Forgot fresh corriander and mint leaves though.... I'll just have to make it again! :)
